Ooh Umme Fayaaz……..U have just N-spired me to make my Eid as beautiful as it should be – keeping it simple! (Read about Eid, Get Ready here) As I sadly say Al Wida to this Month of the Quran…I hope that being around my family on Eid day will lift my spirits! Just being with my Mum and Dad is an N-spiration already for good food!
And how can my dad ever host a function without prawns! Let me share his starter with you:
Cheezy Garlic Prawns:
500g butter
2 balls garlic
1 tsp green fish spice
Melt the above then add:
1 cup fresh cream
¼ cup water mixed with 1 tbsp maizena.
Boil once. Sprinkle Gouda cheese(do not mix)!
Prawns: cleaned and deveined! Simmer with a little olive oil and lemon juice. When water burns out, add to sauce!
Serve with heartwarming cocktail rolls or our very own Foccacia!
As tradition would have it, I am sure my parents home will welcome many concerned and loving family and friends as we have lost my granny (may Allah swt grant her jannah) not so long ago. I was then N-spired to make my Aunt-in-laws popular Fruit mix. Filling up vases of this at home will add colour and warmth, I hope, as Umme Fayaaz advised!
Fancy Fruit Mix
1 kg each of diced dried fruits: Strawberries, Papaya, Pineappple
1 kg Cranberries
½ kg dates (cubed)
½ kg each of cashews, pecans almonds and sliced coconut
Icing sugar
Combine Dried fruits in a Tupperware. Throw over a good amount of icing sugar. Allow to rest for 2-4 days, shaking the tub whenever you can. Add the dates. Dry Roast the nuts and mix in!
Add some vibe: You can add Jelly Tots, Cubed Kiwi, Cubed Ginger, cut up guava rolls,…. Hey! You choose!
